This study was conducted to explore the effects of different proteases(acidic protease, neutral protease and alkalic protease) and process parameters on degradation effect of antigen protein in soybean skin, which the process parameters included the ratio of water, enzyme dose and treatment time and so on. The results showed that under the conditions of this experiment, alkalic protease had a better degradation effect on globulin and β-conglycinin than other proteases. The enzyme dose for 50,75 U/g and 100 U/g alkalic protease to soybean hulls had the better degradation effect globulin and β-conglycinin than that of other enzymes, and the difference among the three were not significant. The degradation effect of soybean hull antigen protein at 48 h and 72 h were both better than that of enzymic hydrolysis for 24 h, moreover, the difference for 48 h and 72 h is not significant. The degradation effect of antigenic protein is better than those ratios of water with 40% and 50% when the water ratio of soybean hull enzymic hydrolysis system is 45%. In summary, alkalic protease plays an important role in the degradation of soybean globulin and β-conglycinin. The enzymic hydrolysis parameters were 45% ratio of water, 48 h treatment time and 50 U/g enzyme dosage, resp. The degradation effect of antigen protein in soybean skin was relatively good, and the degradation rate of antigen protein was over 80%.
